Ingredients
- 1 cup finely chopped fresh parsley
- ½ cup finely chopped fresh spinach
- 12 medium size fresh basil leaves, finely chopped
- 3 tablespoon of grated fresh Parmesan
- 2 tablespoons pine nuts, finely chopped
- 2 tablespoons of olive oil
- 2 cloves garlic, minced and finely chopped
- 12 Crimini (baby bella) or white button Mushrooms
Method
- Evenly combine parsley, spinach, basil, pine nuts, garlic and Parmesan Add olive oil and mix.
- Steam mushrooms 5 minutes and cool down
- Remove stems from mushrooms and garnish with pesto
- Serve at room temperature
