Pesto Stuffed Mushroom Recipe



      • 1 cup finely chopped fresh parsley
      • ½ cup finely chopped fresh spinach
      • 12 medium size fresh basil leaves, finely chopped
      • 3 tablespoon of grated fresh Parmesan
      • 2 tablespoons pine nuts, finely chopped
      • 2 tablespoons of olive oil
      • 2 cloves garlic, minced and finely chopped
      • 12 Crimini (baby bella) or white button Mushrooms


      • Evenly combine parsley, spinach, basil, pine nuts, garlic and Parmesan Add olive oil and mix.
      • Steam mushrooms 5 minutes and cool down
      • Remove stems from mushrooms and garnish with pesto
      • Serve at room temperature
